Monk Fruit and Stevia: A Buyer’s Guide to Beverage Sweetener Trials

Define what is in the powder

For monk fruit, specify Mogroside V and relevant additional mogrosides. For stevia, define the steviol glycoside profile rather than only total purity. Obtain full carrier and added-sweetener declarations, source and production route. A concentrated extract and a tabletop blend are different purchasing items.

Build a sensory comparison that can guide a decision

Use the actual beverage base and compare monk fruit alone, stevia alone and candidate blends at similar perceived sweetness. Record onset, peak sweetness, lingering notes, bitterness and flavor interactions in a blinded evaluation. Repeat after the intended process and storage; do not assume a blend always tastes better.

Compare total application cost

A kilogram price alone cannot select the better option. Compare documented composition, required trial levels, sensory acceptance, handling losses, testing costs and packaging requirements. Use your own pilot data rather than a universal sweetness multiplier or promised savings.

Review permitted use and finished-product labeling

Confirm the exact ingredient and food category in the destination market. Zero-sugar and calorie claims require review of all carriers, juices and other ingredients. If adding green tea, assess its caffeine and catechin profile separately; sweetness selection is not a safety assessment.

Questions to include in your RFQ

Send destination market, intended format, processing conditions, ingredient exclusions and sample needs. Ask for a current specification, batch-specific COA, full composition and risk-based contaminant testing. Specifications and availability are indicative until confirmed in writing; agree acceptance criteria and change-control terms before purchase.
